In the attached image the number 3437 is not clearly visible due to the line going through it, is there any way to change the orientation of that number?
Is that a Point ID using the View FIlter Show Point IDs function - hard to tell from the image.
If yes then you can use the Point Labeling Routine to create real Text on the Points you want to label - those can be controlled in terms of location and orientation with respect to the points with or without Alignment for orientation etc. The Point ID is designed to be "Quick and Simple" but is not really for drafting purposes.
You can change the size of those labels however using the Support - Options function, and change the Text Item for "Object Labels" and you can make that Larger to make it more readable if that is all you need to do.

Increasing the size of the object makes it better but i have attached another image below which shows the Asbuilt data from the field showing the elevations and i was wondering if there was any way to change the orientation of the displayed elevations and also if there is any way to change the color of the slope arrows?Thank You
Slope Arrows are always the same color and cannot be changed - I thought that by changing the Surface Color you may be able to affect that but it appears not to be the case - at least in the quick test that I did.
The Text - again it depends on the Text and how it is being created. If you are Labeling Points using Label Points Command, you can set the text to be oriented to a specific angle, or an angle computed from a selected alignment. Once labeled you can also adjust individual or groups of labels using the properties of the labels.
If you are using the View Filter to Label Points with the elevation, then they are a fixed orientation and cannot be changed.
