I might be reading between the lines, but does your statement indicate that Collector (newer version) will not store orthometric heights, but ArcGIS Field Maps will? I understand that the HAE value is stored in the altitude field and I've seen that it is also being stored in the geometry's Z value as well. It would be better if Collector were storing NAVD 1988 elevations.
I have followed your four part series of blog posts (first part linked below) and am currently looking for any place where I may have deviated. Just want to be sure I'm not wasting my time if Collector won't store orthometric heights.

Hi @Melanie May. I think your best route is to look towards Field Maps on iOS which supports the same orthometric height workflow with TMM across both Android and iOS. Collector will only officially be supported through the end of 2021 as Esri has committed to Field Maps as the replacement product. The field data collection workflow in Field Maps is largely the same as it is in Collector.
