    Today, the easiest way to label a cut fill would be to create a cut fill map and then label the surface elevation of a position on the map.

     

    The second way would be to use a point label.  With a point label you would need to create a point object where you want to label.  Then you can label the elevation of the point, elevation on the surface and the cut/fill to a surface.  Once you label the point you can use the leader lines command to move the label away from the point.
