What I did was highlight the image in project explorer, then on the drafting tab, I created block out of it. Named it logo, and put it on the titleblock layer. Then I inserted the image into my sheet set in sheet view. (Drafting tab>Drafting Elements>Insert Image). I could resize the image by dragging the corners to where I wanted them, and it would automatically scale correctly.
I was able to delete the image from the project explorer, and it's still an option when I click insert image.
I'm using 5.90. Don't know if that matters.

sorry but I´m not sure, which folder you mention for storing the company logo at best. Do you mention the project manager folder or the template folder, where the *.vtc are stored already?

If you are saving the Sheets in the Project Template (I dont personally do that but it is of course OK to do so) then you need to copy your Logo File into the project Templates Folder. You can find the projects Template Folder by going into Support - Options - File Locations and then copy the path for the project Template and then you can paste it into File Explorer in Windows.
The problem that you are having is that when you create a New project and use your Template it copies the project Template into your Projects Folder - and the Sheet if embedded in the Template has a link to a file that it expects to find in the same folder as the project data (the project Folder), however because the referenced image is somewhere else on your computer (e.g. in the Drafting Template Folder), it doesn't find it to copy across with the project Template information. The same applies when you drag and drop a Sheet Template into TBC from the Drafting Templates Folder - the image has to be in that same folder, so that as the Drafting Template is copied into the project Folder, it can also find the image file that you have referenced into the Template and now the project.
