Just a quick one if anyone has ever experienced the issue similar to the one I have shown in attached video?
Long story short, I have a top of wall surface and I want to add the side of the wall for visualisation purposes. The toe string is offset 2mm outside of the top surface. Both top and toe strings in this place are defined as arcs. To add to the mystery it only happens to that one particular string (both sides of the wall) in the project. All other ones, and even other parts of these particular strings where the definition is arc as well, are fine.
Any ideas?

Change your Surface Creation Defaults in Project settings>Computations>Surface
Alternatively you can change the Max segment length under the linestrings properties for both lines to a lower number

I already have those settings in my project and the max triangle settings are at 0.1m. (the distance between the 2 top strings are 0.3m apart). That forces the top linestrings to connect to each other. While adding the bottom one for some reason it does that 'weird' connection and looses shape.
Any other ideas?
see if this works. click on the top linestring and view the properties. change the segment length to a small number . this should give the more (chords)segments along the top line and not give you those dips.
